The name of Pecorino grape variety, also known as “grape of the sheep”, derives from the strong connection between sheep farming and agriculture, common among shepherds' fields. Traditionally, because of the wine’s concentrated aroma, high acohol content and wonderful acidity distinctive of Pecorino, it was used to improve the quality of other varietal wines. Pecorino almost disappeared because of its low productivity, however Umani Ronchi began producing Pecorino in 2005 to preserve the native varietal.
Bright straw yellow colour, it presents intense aromas of fruit and flowers to the nose, with very clear mineral notes, intense and persistent. On the palate it shows a good structure and a pleasant freshness, with ripe fruit and sapid hints.
