Peter Sisseck founded Dominio de Pingus in 1995 with a plot of old vine Tempranillo in the region of Ribera del Duero, north of Madrid. Over the years he has sought out vineyards at risk of abandonment due to the age of their vines (since less fruit is produced). The high quality of fruit from these old vines inspired him to help save them by encouraging local growers to farm organically and biodynamically with the promise that the product of their labor would be purchased. With this fruit, he produces PSI, named after the 23rd letter of the Greek alphabet because of its similar shape to the vines themselves.
